You need to be in "service man mode" before you can use those controls. Using the built-in keypad, press and hold the "TEST" key for 5 seconds. An "enter service man mode?" prompt will appear. Press the up arrow key, then all the convergence and geometry controls should function.
You can use the remote to get started, too but you need good batteries, and you have to steadily point the remote at the IR sensor on the projector to be able to hold the TEST key down for 5 seconds - uninterrupted. It's easier when you're just getting started to use the built-in keypad.
Since you're just getting started, download the manual and read it over a few times to get an idea of the process, then start working the projector. You'll notice the geometry controls work in pairs. You'll achieve better results after you've done it a few times and start to understand how the controls work and interact.
