I've spent a bit of time searching the forums tonight for an answer but maybe someone can answer the ? directly.
Is it better to adjust the picture controls, brightness, contrast etc on the scaler, or on the pj or both ????
Any suggestions greatly appreciated...
Setup:
Sources > DVDO iScan HD+ > Moome HDMI IFB > Sony G70

assuming a proper projector setup I would use the scaler.

And would you set the contrast and brightness in the pj at midway points or ?

I make sure the display device is as "neutral" as possible - then I calibrate with test patterns from a test pattern generator - you have to make sure whatever is feeding you the test pattern isn't doing anything to the signal (eg a dvd player -> dvd essentials, but the dvd player has gamma/tint all over the place) - i calibrate my scaler last
as long as you are happy with the picture and it is pleasing to you, that's really the main thing

as Oliver said use a reference to get your PJ to the best image it will provide. Avia or Digital video essentials,or one of the monitor calibrating options on the net should get you a good starting setup for colour,balance,and greyscale.Both philips and NEC have software out there for simple calibration.

I'll just toss in my 2cents here.
Ultimately - you want a system where all elements in your video chain are calibrated to "neutral" - ie: displaying the video without adding or removing anything.
In reality - you're dealing with a number of components, some which have limitations.
I would suggest working your way forward: Start with your source - ensure it is providing as correct a signal as you can. Then move down the chain.
Your projector is at the end of this chain of components - it will have to compensate for any previous element that has modified the signal. In a perfect world - the input to the projector would be perfect.
In my case - my video processor seems to be the weaker link. So I actually end up compensating via the DVD player to modify the input signal it gets - providing a slightly closer to correct signal to my projector, which then compensates for the rest of it. Is this ideal - no, but its reality.
