Been looking at purchasing a used, older pair of Stax headphones. Anyone have any input on these or electret/electrostatic headphones in general?

The risk is the elements failing due to age. Quad Electrostats, and other electrostatic speakers are notorious for panels going out and they aren't cheap. Stax was popular amongest the audiophiles back in the day, I'd say it's a risky move now, unless they are almost free.
