I was wondering what you would suggest using in between this?
I have a PS3 and I need to go out HDMI, the Barco has a HD SDI input I need to use (have a patchbay hooked up to this so have no other choice). This Barco model is: Barco DL-90P
Now my question is what to do with regards to HDCP? Use component? But then I cannot view a full 1080p BluRay?
Any suggestions on how to bypass the HDCP?

The EXT-HD V2 is a D/A converter... I think Kai meant to recommend a Moome MUX-HD HDMI/DVI Repeater. That would strip the HDCP from the digital stream, then you can use one of the HDMI-to-HD-SDI interfaces he referenced.

So, it would be:
PS3 ----> MUX-HD ----> HDMI-to-HD-SDI interface ----> HD-SDI patchbay ----> Barco DL-90P
That would be an all-digital signal path, and should support full 1080p from the PS3 (or any BD player).

oops, of course I meant the Mux-HD. Thanks for catching that.
One thing to pay particular attention to is whether the HDMI to HD-SDI converter supports 1080p60. Since they are typically aimed at broadcast use most of them max out at 1080p24/30. That would of course be enough for Blu-ray, but I assume that you would have to switch to 1080i for PS3 games then.
