I have had good luck streaming SD video from my PC through my LAN to my PS3. My question is, is a typical LAN connection fast enough to stream 1080P HD to my PS3? Also, I don't want to use my PC as a BD player, just for storage. I'd like to add a BD ROM drive and a 2TB HDD to my PC and have it double as a server. Is it doable???

I bought a PS3 to do exactly what you are asking about....I later returned the PS3 as I was not able to get it working properly. Some movies would work perfectly while I could never get others to work. On some the audio was the problem on others it was the video. This was about 2 months ago so it was using a fairly recent version of the PS3 firmware.
As for your network being able to stream 1080P, I had no problems with streaming over a 100M network. I'm back to my HTPC streaming Bluray and HDDVD from my 8TB server. I use PowerDVD for playback, it works well enought to keep me happy. I rip my disks to the server with Imgburn and AnyDVD HD and mount the images on the HTPC with Virtual Clonedrive. I use an ATI 4850 to output HDMI audio and video.

Most HD movies are in the 20-25 GB range, I believe. 20 GB for a 2 hour movie is 10 GB / hr, 2.78 MB/sec, or about 22 Mbit/sec. Even with network/protocol overhead, a 100M network is loafing at that speed.
