It depends how you are feeding the machines, if via PCs, just have one pc flip the image.

Good suggestion, at some point that may be viable however at this point I can not pipe all the sources through the PC. I built it specifically for driving dual projectors in mind complete with ArcSoft, dual dvi graphics card, blu-ray player and digital tv tuner. One problem to solve, I have no method to input external HD sources. Work in progress..

Holy crap, I never thought of running the damn things on their sides. That's crazy. Wouldn't be much good for a ceiling mount setup, but it would certainly require a lot less geometry correction than a side-by-side stack would.

You don't need to do anything funky with a PC. You'd just rotate the magnetics 90-degrees to the right in the right machine, and 90-degrees left in the left machine. Voila!
Interesting. Never though of running the machines standing on edge. I suppose you'd have to weld something up to hold them in that position, and they'd take the best seat in the house... and then some.
