I love your drawing, I am just trying to visualize everything.
So the allthread will be connected up to the 2x4's spanning across the trusses, I would drill a hole through the 2x4 slip the allthread through those holes with wasshers on the upper end and nuts to secure them.
Then as the allthread clears the drywall on the ceiling I will attatch the unistrut to then ends of this as close to the ceiling as possible and even with one another, then there will be unistruts on the pj bottom with allthread up to the unistruts at the ceiling, this will allow me to slide the PJ back and forth if need be, and a little side to side as well? Will this be rigid enough? In other words wont the allthread move a bit from side to side?
I hate to sound like an idiot, but I am just trying to visulize this in my head.
Now if I were to use the mount, I would place the mount at the end of the allthread, one side would be fairly flush with the ceiling, the other end would be down a few inches from ther ceiling as it tilts from left to right at the front of the projector, will the mount be rigid enough if I use this method "No comments guys "
I got some of you telling me UNISTRUT and Draganm telling me to go with a mount. Decisions decisions.

No Draganm is telling you to do both.
