Turning these two pots seems to do absolutely nothing at all, but pressing 0 or 100 on the remote clearly has some effect, although not a huge change. Pressing 0 makes it reasonably dark, pressing 100 seems to make it look perfectly normal.

What mods can I do to this box to make it better??

Dont touch the contrast pot, and the gamma pot is a extreme fine adjustment, so that you can adjust a level betwen 2 settings on the remote.

Put contrast to 0, and set the right level for your setup, then calibrate your projector to it.

Im quite sure it do, but you need to meassure it, dobt you will be able to detect by eye.

I always deactivate the gama section of the card.

Do you have a pic of your card, from the inside, so i can see the print layout.?

Pretty simular yes, the intructions were on the MOOME website.

I had to open it up when i got it because i had issues with it and my AVR, had to set jumper 7 to on otherwise i mostly got a black screen.

In my case.
once I touch the remote gamma button. mechanical gamma pot on the ext v3 was never working.

after power off and on with dc cord, remote gamma is reset and follow mechanical pot setting.

The MOOME is set with switch 1 on and the rest off, so its on 16-235, i have deep colour turned off, and the OPPO is set to 4:2:2.

The PC is set to 16-235 which is default for video viewing mode, and i dont adjust anything else there.

You know you have to set a jumper on the switch too when you use the pots.

Look at the color space indicator on the moome card, if they are on the EXT box, and see it not getting RGB.

The OPPO 103D sometimes send out the wrong colorspace, even its forced to 4:2:2.

Then you need to enter the menu and flip the colorspace.

With the Moome set to 16-235, you will display blacker than black and whiter than white, is it also like this out of the PC.?

I often prefer the moome to run 0-255 for clipping white and black perfect.

Best way is to check the patterns see where black and white clips, and use the best match, im not 100% sure that the moome levels are named right.

Forget about the trimpots, just be sure you did not mess up the contrast setting. Press 0 on the remote, find the level who fits best, and adjust the rest in your projector.
