Sometimes, depending on the poster, the text window is wider than my screen and I have to scroll to the right simply to read what the person wrote. Then, on the next page, if that poster hasn't posted again, the screen will format back to "normal" width for me and I can read posts in their entirety without having to scroll to the right.
Same thing happens sometimes when people post pictures that are real wide.
Most of the time I don't have this problem.
I looked through my profile options, but I don't see anything there that I can specify the screen formatting in any way.
Am I missing something? Is there a way to make this "better" for me?

Nope. Other than asking people not to post large images.
If someone links to a picture so that it shows up in our forum it'll simply display that picture regardless of your browser size. If they upload a picture instead, I have the sofware set to only display an icon for the image if it's beyond a certain width to avoid blowing out the page width.
It may also happen if they post very long (unbroken) text like URL links as the forum software cannot break it into two lines easily without breaking the link.

This effect is exactly I always try to make the pics I'm posting to the forum ~900px or so wide - whether I'm attaching or hot-linking. That way, even if somebody is using a 1024x768 laptop (that's what my "kick around the house/surfing notebook" is), they don't have to scroll. Even on my desktops with big monitors, I hate the super-long line-lengths - it's hard to read.

Yep, I'm at 1024x768 - thanks for the feedback - seems I'm not the only one seeing this
